This is a great question, but not an easy one to answer. There are so many different styles of chairs out there that it’s difficult to give a general answer.
To look at it as simply as possible, it’s a matter of measuring the segments of the chair and breaking it down into rectangles. The back is a rectangle; the seat and the arms are also rectangles. Your slipcovers will need to be those various rectangles (plus seam allowance) sewn together to look like the chair.
Fabric is also an important consideration. Get something attractive and serviceable, preferably with a water-repellant finish.
There are many books on this subject, with lots of specific details. I encourage you to go to your library or bookstore and check them out for more details.
